The Hokkaido crab meat dishes: rice, omelette and crab cakes

The kitchen's Hokkaido crab meat dishes are lighter, smaller plates than a whole crab: Crab Meat Fried Rice at $16.80, with omelette at $22.80, an Egg Omelette with Hokkaido Crab Meat at $21.80, Homemade Hokkaido Crab Cakes at $15.80 and Hokkaido Seafood Fried Rice at $28.80. A metal crab cracker is $5.80.

Not every crab occasion needs a whole crab. The kitchen’s catalogue also lists a group of smaller dishes built around Hokkaido crab meat. They suit one or two people, a side to a bigger meal or a first taste of the crab side of the kitchen.

On the printed menu, the two Crab Meat Fried Rice dishes sit under the heading “Wok on the Wild Side”, and the crab cakes and the omelette are listed among the starters.

What is Hokkaido crab meat?

The catalogue says Hokkaido crab meat, which tells you the origin the kitchen names for the crab meat in these dishes. The whole crabs in the signature dishes are described on the menu as Sri Lankan mud crabs. The two are different products with different jobs: the meat goes into rice, omelettes and cakes where picking is already done, and the whole crab is something you work through at the table.

Which one should you try first?

  • The Crab Meat Fried Rice. The simplest entry point, at $16.80, and it uses Akita rice, a Japanese short-grain variety.
  • The omelette dishes. If you like a soft egg dish, the rice with omelette or the plain Egg Omelette with Hokkaido Crab Meat are the options, at $22.80 and $21.80.
  • The crab cakes. At $15.80 they are the cheapest crab-meat dish and the one that works as a shared starter.
  • The Hokkaido Seafood Fried Rice. The most expensive, at $28.80, and the only one that adds scallops and prawns. The catalogue says it serves one.

What about the crab cracker?

It is a limited edition metal crab cracker, $5.80, and it is for people who plan to eat a whole crab. The photograph in the catalogue shows a silver cracker lying across a bowl of crab laksa, with the kitchen’s name engraved on it. We do not hold its size or material beyond “metal”, and we are not going to guess.

Where are these dishes served?

The full crab range is prepared at the Tyrwhitt Road flagship. The AMK Hub kiosk carries a limited crab range of only the Crab Bee Hoon Soup and the Crab Laksa Bee Hoon, so the dishes on this page are not a safe bet there. The outlets page lists both, and the crab page puts the whole-crab dishes beside these smaller plates.

What should you know about allergens?

These dishes contain shellfish, and the omelette dishes contain egg. The kitchen states that its products contain nuts, eggs, dairy and gluten. The kitchen uses no pork and no lard and is not Halal-certified.
