Three crab sets for sharing: Luxurious, Flounder's and Festive

The kitchen lists three crab sets for tables of two to four: the Luxurious Seafood Bee Hoon at $68.80 (serves 2 to 3), The Flounder's Crabby Choice at $88.80 (serves 3 to 4) and the seasonal Festive Seasonal Crab at $58.80 (serves 2 to 3). The two bee hoon sets need three hours' notice.

The signature crab dishes are priced by the size of one whole mud crab. The kitchen also lists three sets aimed at tables of two to four, built around flower crab, a different crab from the mud crab used in the signature dishes, together with shellfish and bee hoon. This post lines them up.

Luxurious Seafood Bee Hoon. Scallops, clams, prawns and sweet flower crab on bee hoon. You choose the sauce: a rich laksa broth, a savoury seafood gravy or a black pepper sauce. You also choose thin or thick bee hoon. The photograph shows the set with three small bowls of sauce.

The Flounder’s Crabby Choice. A broth brewed with dried flounder, dang gui (angelica root) and sweet yam, with scallops, prawns, a pair of flower crab and thick bee hoon. The dried flounder is the kitchen’s chosen base for the broth. The catalogue card for the set carries the words “Seasonal Menu, Exclusively at 39 Tyrwhitt Road”.

Festive Seasonal Crab. A fleshy, sweet seasonal flower crab. This is the one set marked as seasonal in the catalogue. Its photograph shows a gold ornamental hammer, and the note on the photograph says that the Golden Hammer Set is to be purchased separately and that the photograph is for illustration only. We have no listing for the price of that hammer set.

How do you choose between them?

  • Table of two or three, wanting variety: the Luxurious Seafood Bee Hoon, because it mixes scallops, clams, prawns and crab and lets you choose the sauce.
  • Table of three or four, wanting a broth: The Flounder’s Crabby Choice, because it serves the most people and has the dried flounder broth.
  • Table of two or three, wanting the crab itself: the Festive Seasonal Crab, which is the lowest price of the three and is focused on a single seasonal crab.

Flower crab or mud crab?

The signature dishes use a whole mud crab that comes by size, from Regular to XL+. The sets use flower crab, which the catalogue calls sweet. The two are different animals, and the sets are written as shared, composed dishes rather than a single crab on a plate. If you want one big crab, go to the crab page. If you want a spread, choose a set.

What should you know about notice and place?

The two bee hoon sets need three hours’ notice, which is far shorter than the day’s notice for a whole crab dish. That makes them the easier crab option for a same-day plan, but only if you order through the ordering site early enough. The full crab range, which includes the sets, is prepared at the Tyrwhitt Road flagship (see the outlets page), and the Hokkaido crab meat dishes are the smaller plates from the same catalogue. The AMK Hub kiosk carries only the Crab Bee Hoon Soup and the Crab Laksa Bee Hoon, so do not expect a set there.

What about allergens?

All three sets contain shellfish. The Luxurious Seafood Bee Hoon includes clams and scallops. The kitchen states that its products contain nuts, eggs, dairy and gluten, and that its crab soup is cooked with Chinese cooking wine and herbs. There is no pork and no lard in the kitchen, and the kitchen is not Halal-certified.
